Clover Coffee & Pilates Approved as New Peotone Business

The Clover Coffee Trolley won’t be seen around town anymore. Owner Isabel Montes de Oca sold the trolley to go brick and mortar.
As a result, the Village of Peotone Board of Trustees approved a new business registration at its January 12 meeting for Clover Coffee & Pilates, a combined fitness and coffee concept planned for 427 S. Governors Highway.
The business will offer hot Pilates classes alongside a coffee operation, allowing customers to attend workouts, grab coffee, or do both in one location. The owner told trustees the concept grew out of the Clover Coffee Trolley mobile presence previously seen at the Peotone Farmers Market and other mobile settings.
“I’m ready to open a brick-and-mortar,” owner Isabel Montes de Oca said, explaining the space will be a hybrid studio and café.
In a statement to Peotone Local, de Oca added, “With the brick-and-mortar, the vision is to create a welcoming, feel-good space for the community. Along with Pilates, there will be delicious handcrafted lattes, teas, and energy drinks. Plus, I plan to partner with a local baker to offer fresh-baked goods. I really want it to be a cozy place where people can come to move their bodies or simply sit, sip, and connect. There’s nothing really like it in the surrounding communities. I’m also from rural Peotone so it’s even extra special. It felt like the perfect place to grow. I love the strong sense of community here and wanted to build something that brings people together and adds a little extra excitement to our small town.”
The business is targeting a March opening, pending completion of plumbing updates at the site. The owner noted that existing plumbing from the prior tenant may be reused to minimize construction work.
Trustees voted unanimously to approve the new business registration. Board members welcomed the addition and Village President Chris Vieaux reiterated the village’s ongoing efforts to recruit new businesses, noting that officials have reached out to approximately 60 potential businesses in recent months.
Vieaux encouraged residents and trustees alike to continue sharing business ideas that may be a good fit for Peotone.
